I have a gigabit internet connection, but just moved my PC from downstairs to upstairs. Before, I was close enough to my router that i could just use an Ethernet cable from my router. Now, with WiFi I have speeds under 1 megabit which simply is too slow. I don’t have any Ethernet jacks upstairs, but have what seems to be a coax cable. I’ve been reading and wondering what I should do and if I should use the coax or get power line or something else

You could get a long ethernet cable, tie it to the coaxial cable then pull the coaxial cable out from the wall, which will get the ethernet cable inside the wall where the coaxial cable used to be.  You can install keystone plugs or regular network jacks on the ends of the ethernet cable.

Powerline networking would work but won't be as good as actual ethernet cable  and if your computer/laptop doesn't have an ethernet cable, you can get a wireless router/access point and connect it to the ethernet cable you pull through the wall.

MoCA > Powerline.

If you can avoid it, don't use powerline. As mentioned by Electronics Wizardy you can use the existing coax to get Ethernet up to the second floor assuming the other end has a connection near the router.
