A laptop is just a PC that's designed for carrying around and lower power-usage; it's still a PC, so yes, you can.

If you don't know the uses of a server, why do you think that you want one? Usually people find a problem / specific need and then find a solution, not the other way around.

I use an old laptop as my phone backup server via itunes, and as a place I can dump my old files and garbage I don't use often on,

Before cars were invented, we had horse-drawn carriages that were clunky and inconvenient. Is there something you do on a regular basis that a server would make easier or more efficient?

 

For example, in my case, I have a slow internet connection and am always losing flash drives, so I set up my Raspberry Pi as a NAS so I wouldn't have to use cloud storage as much. I also don't like searching my CD shelf for music, so I set up a media server that plays to my stereo.
