I'm new to mining myself and just started dabbling in it out of interest in crypto and because my GPU was still a little profitable, but it's a little too late I feel honestly. In any casea: don't expect big bucks or a quick turnaround and don't invest money you cannot lose.

im considering building a mining rig, here are specs: 10980xe 5x rx580, 1660s, 64gb ram

Quadruple check if you really need such an expensive CPU... CPU mining is dead as far as I know, or at least horribly inefficient/ineffective.

what software/currency should i use to be the most profitable?

Figure out what your electricity cost is and how much power your system will suck and figure out what currency is profitable based on that, if any. Also consider that you'll need to earn at least your rig+electricity costs back before you'll even have made a profit and that you're at the mercy of the market so there's no guarantee on any profit.

my mining rig uses a ryzen 3 1200 and 8gb of ram and 6x RX 570's, why TF are you going all out on the ram and CPU? spend that money on quality PCI risers and more GPU's

also power cost is a huge factor for most people, i have free power so i DGAF and my profit is about $15/day or 0.013ETH i use phoenix miner and i love it, mad controls for everything and very very low dev cost compared to others. i mine on ethermine and their fees are 1% which is cool because their UI and everything is top notch especially compared to some of these other pools out there with lower fees.
