which one I should go with Amd r5 5600x + gtx 1660s or Amd r5 3600 + rtx 2060 if the main target for the build is gaming on 1080p ?

The Ryzen 3600 and RTX 2060 would be much better for gaming (though to be fair at 1080P 1660S is alright too). The difference between a GTX 1660S and a RTX 2060 is pretty significant and a better CPU isn't going to make up for that difference.

100% agreed with the above poster. Definitely the 3600/2060 combo will be fun stuff at 1080p.
