Ryzen 5 3600 or 2 10 Core Xeons(2nd or 3rd Gen) on a budget

Hello I do video editing, code compileing, and after effects animation.Also i regularly run many Hyper V VMs, my question is what is better for that ryzen 5 3600 or 2 10 Core Xeons and some Generic mobo(either those Chinese ones or some basic SuperMicro)?

2. I thouth if I got the second option, would it be compatible with VMvare vCenter or is that just for "prebuilt" servers?

3. Would it be logical to install Proxmox on the dual 10 core machine and then pass a GPU to the Windows instance. Does every VM need a GPU?

3. a. Can i set it so that Windows instance can utilaze lets say 18cores but only under full load. Idle it splits it as i set it.(Also if unRAID is better for this please let me know)

4. Gaming isnt a big priority(I know that the Ryzen setup would be better)

Ryzen 2700? Same price as a 3600 but more cores. The older xeons have the issue of being 2 cpu nodes and therefore losing a lot of compatibility with software that just can't see more than one. That and they are just old. What 10 core xeons? There is a big difference between second and 3rd gen xeons so pretty important to know.

Do those 2nd and 3rd gen Xeons have high frequency? Because adobe apps favor those.

Very true adobe stuff like fast single core performance and many cores in terms of premiere and after effects. Also adobe suit can't really use a second cpu.

Hmm interesting. If Adobe apps like higher clocks then the 3600 would be better(or the 2700), thanks. The Xeon would have probably been the Intel Xeon Processor E5-2690 v2
