I saw this https://www.newegg.com/black-acer-nitro-gaming-series-vg270u-pbmiipx-27/p/N82E16824011243?Item=N82E16824011243

Does freesync work with Nvidia cards fine? If so i think these ones look good. Do you think my PC specs are good enough to paly games at at least high settings at stable frames?

You should be able to yes, and FreeSync works with 10 series GPUs and up

I'm not sure what type of monitors i should get. I mostly play older games and MMOs. ESO, FFXIV, BnS and Skyrim, FO4(modded to hell), Valorant. I will be playing Dying Light 2 and CyberPunk when they are out. But i cant stand frame drops in games and i'm not sure my specs are really ready for 4k 60fps.

i run 3 monitors and will bee getting 3 new ones soon, my specs are Intel(R) Core(TM) i7-7740X CPU @ 4.30GHz, NVIDIA GeForce RTX 2070, 32 GB Ram, Win10.

Should i stick with 1080p and go 144hz or do a middle ground 1440p 120hz or go for 4k60fps or could i get away with a 1440p with 144hz?. I also plan to get a gsync monitor as i go with nvidia cards anyways and not a ultrawide and 3 of them next to each other is to wide. Any recommendations on what monitors would be best for me?

1440p is the king resolution imo. So I'd say that. Why don't you want a single ultrawide? or ultra ultra wide?

I like having a middle monitor for games, left for YT/Hulu and right for chats, task, twitter, guides etc. I might be willing to get a ultra wide for center to see but i generally prefer standard size.

That's fair. I enjoyed the functionality of my triple monitor setup. But I feel like if I mount a monitor/TV above it will be perfect. But I feel you.
