So how am I able to tell if my GPU supports certain Display port cables.

As @Enderman said, cable is the same. What's you GPU model? You should be able to find the info online which DisplayPort version your GPU supports.

Hello, I got myself a 240 hz monitor, will the display port 2.0 run 240 hz on 1080p and support G-sync/Freesync?

There are no GPUs with DisplayPort 2.0 yet. So you should most likely check what DP version it supports.

DisplayPort 2.0 has a maximum bandwidth of 80 Gbps (77.37 Gbps data rate). 1920x1080 @ 240 Hz requires 14.93 Gpbs, so yes absolutely doable. Whether Gsync/FreeSync is supported depends on your monitor. Check its manual whether that is supported and at which frequencies (not necessarily up to the monitor's max refresh rate)

All displayport cables are the same.

They are just cables.
