I would suggest a 3600 not X, which is a bit better value. And you could maybe spend the difference in aftermarket coolers now or in a future upgrade. 
Not sure about PSU, might be a bit tight in wattage.
But overall, it's pretty well put together, make sens.

the ryzen 5 3600x is fine, it is 5% better than the normal version and it comes with decent stock cooler

Tier lists for building a PC.

 

Motherboard tier list. Tier A for overclocking 5950x. Tier B for overclocking 5900x, Tier C for overclocking 5800X. Tier D for overclocking 5600X. Tier F for 4/6 core Cpus at stock. Tier E avoid.

(Also case airflow matter or if you are using Downcraft air cooler)

Gpu tier list. Rtx 3000 and RX 6000 not included since not so many reviews. Tier S for Water cooling. Tier A and B for overcloking. Tier C stock and Tier D avoid.

( You can overclock Tier C just fine, but it can get very loud, that is why it is not recommended for overclocking, same with tier D)

Psu tier List. Tier A for Rtx 3000, Vega and RX 6000. Tier B For anything else. Tier C cheap/IGPU. Tier D and E avoid.

(RTX 3000/ RX 6000 Might run just fine with higher wattage tier B unit, Rtx 3070 runs fine with tier B units)

Yeah Im not sure about the PSU as well. Should i get something between 600- 750W.

550W is more than enough for this build. Also for the same price (usually) the 5700XT is the same price as the 2070 for better performance.

Again, not sure for the PSU. Should be fine but I have a small doubt. Might be not super efficient.

If @Winnie Pooh is not planning to stream ( NVENC is a killer compared to AMD's offering ), then yeah, the 5700XT can be a good choice. But then he also have to be a little careful with drivers.

This PSU is fine, 550W is enough, AMD drivers have been fixed for the 5000 serie.

Does this mean that i wont be able to use a monitor that with the refresh rat of 144Hz

The monitor need to have a 144Hz refresh rate too and they usually come with the proper cable.

I think I am going to take this m.2 instead because the western is with sata. But I am not sure if it is better so please give me your wisdom.

That NVMe is faster than the SSD but it's DRAMless and has less endurance, for game you won't notice anything too ;)
