Ok so, currently I have this: https://www.newegg.com/corsair-force-mp300-120gb/p/N82E16820236394?Item=N82E16820236394 which has worked alright for me, until I found out that corsair is basically false advertising this as a NVME drive, as it only has the speeds of a SATA M.2 drive.... Anyways, I found this refurbished 970 evo on Best Buy for only $40, sounds like an amazing deal. But im wondering, is buying a refurbished NVME drive worth it, or will it just cause me more problems in the long run?

Interesting, I dident know that, guess thats why I couldent find any 120GB Samsung Evo or Pro NVME drives

256 ones aren't much faster. You need 500GB or more to really start seeing speeds of 1GB/s or more. But frankly, a SATA 3 MX500 is going to be fast, cheap and high capacity so I'd look at that.

I wouldn't bother with small NVME drives. Just get something SATA with a higher capacity, you won't notice the difference.
