Deleting email messages forever. Is it necessary? Who has your mail access?

So this is my question try to follow.

If you have a email address that is not @gmailcom , @yahooocom etc. but a custum domain.

Through that domain emails have been sent.

Can the right person or the owner of the domain have access to all of the emails that have been sent through that domain.

Is it even possible? Does deleting your emails from example thunderbird or similar mailing programs delete the whole thing or it still stays "somewhere" on some server?

Now the other part. If its possible that emails are still visible somewhere. Can you delete them from their existence?

Or am I over thinking it and a permanent delete on the mailing program is just fine.

You can safely assume that literally everything from every email domain is saved somewhere.

Whoever owns the domain can point it's mx record (that's where the mail is delivered to) to whatever server, gateway, maninthemiddle device they want.

So if you use anybody elses domain for mail (even gmail or yahoo) they could see, read and save it.
