Do I need the H150i Pro?

The H110/115i will still do just fine. 150 will be quieter though, since more surface area = lower fan speeds required. 

 

 

Ok, so I am getting the Corsair 780T case along with i7-8700K. Do I need the Corsair h150i Pro or can I settle with the H110i or H115i and still get great cooling, If needed, I am using this PC for Game Development and hardcore video editing with maybe some hard gaming.

You could use a high end air cooler like a Noctua NH-D15 or Be Quiet Dark Rock Pro 4 and be perfectly fine. Any (non 120mm) water cooler just gets you more overhead if you want to really push an overclock.
