I had a GTX 1080 Armour from MSI for quite some time, and I never experienced any problems whatsoever with it. I do think it's a bit weird talking a card down; you've never even owned yourself.

Mine did hit 81c in Ark epic settings. With an Arctic accelero and now water cooling it runs in the 40/50 range under load.

The Armor cards have a tendency to run hot and loud from what I've heard.

Mine did. I believe there were only two heat pipes and the fin stack is pretty thin. With the low price it is a fair deal when aftermarket cooling is already in the plan.

So after looking around I came across this GPU MSI GTX970 Gaming 4G Any thoughts about running this with my setup?

Also found an MSI GEFORCE GTX 1050 ti 4G Gaming X

Another thing, should I use 32GB of RAM or just go with the 16GB???

If you're only going to use it for gaming, 16GB should be sufficient. If you are going to do a lot of productivity, I would say go for the 32GB.
