2. Is it practical, cause I need it for Logic and FCPX

 

3. How long will it take for a "golden build"

I suggest you to not use Tonymacx86's tools; here's the best general hackintosh guide out there: https://hackintosh.gitbook.io/macos-internet-install/

Use this guide to set it up initially, then you can go follow other smaller guides to fix things specific to your build
