Yep. All data is stored on all drives, so it should be fully readable from any of the drives. 

so lets say that my mobo dies and i have drives that are in raid 1 using the mobos integrated raid chip can i just take a drive from that array and plug it into another computer and then read off it?

Don't use mobo raid

 

Just use a single drive with a backup. It will protect your from much more than a raid ever could.

 

Normally with raid 1, you can read the data on any system as a bare drive., other wise it should work in any modern intel system.
