Based on the information you gave, I'd go with #1.

Though how much video editing do you actually plan on doing?

Why get bundle ?

 

Get separate ... you don't need a 500$+ motherboard so you can save some money:

 

429$ : Amazon.com: AMD Ryzen 9 3900X 12-core, 24-thread unlocked desktop processor with Wraith Prism LED Cooler: Computers & Accessories

 

300$ : Amazon.com: MSI Meg X570 Unify Motherboard (AMD AM4, DDR4, PCIe 4.0, SATA 6GB/s, M.2, USB 3.2 Gen 2, Ax Wi-Fi 6, Bluetooth 5, ATX): Electronics

 

or if you want cheaper but still great in combination with the cpu :

 

200$ : Amazon.com: Gigabyte X570 AORUS Elite (AMD Ryzen 3000/X570/ATX/PCIe4.0/DDR4/USB3.1/Realtek ALC1200/Front USB Type-C/RGB Fusion 2.0/M.2 Thermal Guard/Gaming Motherboard): Electronics

 

"mostly gaming and coding and video editing ..." that excludes heavy overclocking and lots of tweaking of bios options and stupid things you'd never use on that crosshair board.  All of the above boards will offer pretty much what that crosshair offers.

Put the difference into an extra 16 GB of ram, or better graphics etc etc if you want to kill that money you have in your budget
