Nothing exists in a vacuum. I could easily say the 5820k, but then that might screw over your GPU budget and so on. Obviously the best i7 for gaming/editing is the most expensive unlocked one you can afford. What's the rest of the build, where do you live, and what's your budget?

5930K. But the 5820K is a better value unless you are planing to do 4 way SLI. 5820K and 5930K are the same CPU besides lanes.

Keeping my 280x until AMD's 3xx series come out so I can have more options. Budget is around 2k+ euro and I live in Greece. Oh it feels good to spend hard earned money on heaven.

P.S.

So far I'm thinking 2 970s or even 2 980s if business is really great for me this next few months.
