What size water cooler can I fit in the Rose will Challenger U-3? I was hoping I could fit the h100i GTX.

That largest AIO that you can fit in that chassis is 140mm.  You will not be able to fit a 240mm AIO.

 

Honestly, anything smaller than 240mm for an AIO is not the best investment.  You will generally pay less, get more quiet operation, and better temperatures from a good air tower cooler than going for a 120/140mm AIO.  If you want a water cooler just for looks, then an NZXT X41 or Corsair H75 / H80I GT/ H90 is going to be your best option.  But, when spending that amount of money, you will get much better all around performance and lower noise, while spending less if you went for a Noctua NH-D14/15.
