For gaming, editing and OS, a single 120/250 GB SSD should fill up pretty quickly. I would provide you wish a significant speed/load boost on all your programs and games.
I believe SSD+HDD is far better than SSHD as it gives you freedom to decide on what to put on the SSD and what to leave for the HDD. Moreover, SSHDs get 8-16GB of SSD only for more commonly used files while a full-sized SSD would give you a lot more space. 2 separate drives give you more security and redundancy in case of failure, while if either drive in the SSHD dies - you lose the whole drive. SSHDs take up only one slot, though, while SSD+HDD take up two slots and more space in your case.
I would suggest getting the two separate drives.
