How much slower?? It suffer of unstable framerate or it goes like a ''1070'' in framerate??

Depends on the screen resolution, but as a rough estimate the 1070 is maybe 20% faster. Also it's hard to find benchmarks for newer games as most reviewers don't include the Fury anymore.

The framerate shouldn't be unstable, unless you run out of VRAM.

I'm closing an negotiation for a r9 fury Sapphire triX, how much is good this gpu? And whith what today's gpu can I compare it?? There are difference in perfomance beetwin 4gb HBM and 8gb GDDR5, like in the case of gtx 1060 3gb and 6gb, where the 3gb dont give a stable framerate??

I have beat the r9 fury in synthetic benchmarks with my rx 580...my card trades blows with it.

I agree though that the fury is a little better on average than rx580 or gtx 1060, but imho....not by much.
