So I was looking around in my local listings to find a cheap used motherboard, but instead I found a bunch of Mac listings. Are they decently priced?

I've seen worse. 200 bucks for a unibody plastic MacBook with missing keys, battery, and stained with Nicotine? Yea, no. You'll have to pay me to even attempt to touch that thing.

That 21.5" 2012 seems good. Bad dGPU but at least it has one. Also 2012 models get access to the latest wireless features of macOS like AirDrop between iOS devices/Macs and Hand-off.

I'm 90% certain I could take a 5 year old MacBook that was in decent condition, take a shit on the keyboard, close the screen on it, and let it bake in my shed for a month this summer and still get $300 from an Apple fanboy for it.

Entry level imacs are pure trash, I suggest getting something that at the very least has an ssd and a quad core cpu if you're buying a desktop. None of the ones on the list are worth half of the asking price but if you really want a mac it's less of a ripoff than buying them new.

True - and they're Core 2 Duos. But, for the price + having the latest Mac OS versions (El Capitan capable and up), it is better-priced than what you showed. Sometimes, you pay in cosmetics for what you get in affordability...

Is there a possible way to just buy a SSD and install them into a iMac? Or would it not allow it?

It depends on the model, generally yes but with the newer models I think you need a specific drive format (more expensive) and opening them is a pain.
