You woldn't have to overclock very far. I also wouldn't worry about temps too much personally, as long as it stays in the normal range you should be fine.

Hello everyone, right now im rocking a r5 1600 with a 2gb gtx 960, im looking to upgrade to a gtx 1080 evga sc acx 3.0, i know that their shouldn't be a bottleneck. im looking to also purchase a ekwb a240, but im afraid that the aio will not fit in my case. the current case that i have is a deepcool kendomen, i have looked at their website and it says that it supports a 240mm but im not sure if that's on the top of the case or in the front.

Get a 1070 Ti instead, it's the same thing at gaming after you overclock but cheaper.
