So I'm looking to make some changes to my rig and have some things already on the way, the question is, will I need a bigger power supply? Everything is listed below of what I have and what I want to add.

Current power supply: Corsair cx600m

What I want to power:
GTX 1080 Duke 8gb
i7-6700k cpu
GIGABYTE GA-Z170X-UD3 Mobo
120gb Corsair SSD
2 HDD drives 1TB
MasterLiquid Lite ML240L
MasterCooler H500p case
EVGA-3000 16gb DDR4 ram

It would be enough in terms of wattage but as a power supply itself I would suggest to get a higher quality unit that is more suited for the hardware at hand. The CX series (green) is considered to be an entry level unit.

Any suggestions on what I should get?

Here's a good list to choose from, I usually recommend the EVGA G2 or GQ series it depends what you have available as prices can vary.

As far as wattage with overclocking and such, should I go with a higher watt psu? If so like a 850?

Not really, your system will use less than 500W at full load, bit more when overclocked so even a 650W unit is more than enough with headroom to spare.
