Apart from the fanless one (is it ever coming out? I want one so bad), any of those options should be fine.

If you are aiming for silence, consider the windowless versions as they have a solid sidepanel covered in more noise-dampening material (instead of flimsy acrylic, don't know about the acoustic properties of tempered glass).

 

Also, the more important thing is your fan choice, fan curve setup and to an extent your components.

My case is not considered "silent" at all, yet it would beat most setups I've seen in Define cases. It's all thanks to the whole setup. No HDD, stock GPU fans removed, semi-passive PSU (way underused, so pretty much just "passive") with as little coilwhine as possible and only high quality fans set to low RPM. The only way to improve it would be to add aftermarket noise-dampening material to at least the sidepanels.

Most cases at this point could be considered "quiet".  What I've found to be more important now is the fans used as well as the cooling setup.  For instance, for my home PC, I use one of our moderate quality gaming cases.  The metal is thinner than a silent case, and it doesn't have any noise dampening material, but it does have a 5V/12V fan control switch.  The CPU is an efficient Core i5, and I have an MSI GTX 960 card with one of their ultra-quiet coolers.  To make it silent/ultra quiet, I used 1,000RPM 120mm fans in every mount, and have each one mounted with cheap anti-vibration pins.  The CPU heatsink is a tower style with a 1,000RPM 120mm fan, also mounted with anti-vibration material.  I keep all those fans running at 5V (about 500RPM) most of the time.  I also replaced the cheap PSU fan with a quieter fan (making sure it wasn't too slow for the PSU to overheat) and used anti-vibration pins for that.  I only have an SSD and no mechanical hard drives.  The result is a system that is fully inaudible under regular use unless I put my ear on it, and even when I turn up the fans for gaming, it's still very quiet.
