An  alternative Intel build using the new i3-8100 4-core cpu. It's in an attractive white mini-ITX case. A black version is available. I have used the US pcpartpicker.com. Local pricing and availability will have to be determined.

 

Three storage devices are not needed. I've included a single 500GB ssd for system and user data. If more storage is required and budget allows switch to the 1TB model. The 4TB hdd is present for backups.

Since she's working on it and those expenses might be tax deductible I'd rather make sure the system lasts so. I think a current gen i5 with 6 cores is a good idea. Memory can always easily be upgraded in a few years so 8GB should be absolutely enough for her needs for now. Rathern than just one backup drive I'd suggest a RAID 5 consisting of at least 3 drives. That way you'll end up with 2/3 of your capacity while one drive can "safely" fail. You should still setup a cloud backup or at least a NAS to store backups on a system that's not directly attached. Those backups would stell be no help in case of fire, theft or natural disasters. Professional data should be backed up in multiple ways and one should always be an off site backup. Daily or at least weekly backups with tapes would be an option but also quite a hassle as well. 

Since you haven't mentioned peripherals I'm just going with this build. That case has plenty of space for up to 10 drives. A RAID 5 system can usually be expanded on additional drives, so if she ever runs out of storage space even with small 1TB drivers she could upgrade up to 6,66TB.
