Ryzen 1700 / 1700x will give me only one advantage which is double CPU cores/threads.

 

So, I am still thinking about i7-7700K.

no it doesn't if you look at the states that relate to your workload then 1700 is better, the multi core score on 1700 is 1209 and the 7700k is 745. it has 16 threads vs 8 which will allow you to give 2-3 core per vm versus just 1-2 cores.
