So this time around the jump from Pascal to Maxwell was big , like the 1060 (which I have) is basically twice of the 960. However, the jump in performance from 760 to 960 was like, nonexistent. Just wanted some opinions; do you guys see a hypothetical 2060 being 1080 performance or would it be like the 960, which was more in-between 760 and 770 performance? If so, should I just maybe wait for the architecture after Volta?

The 2060 will probably be around the 1070.

That seems a bit optimistic to be honest. The 1070 is like 50% faster than the 1060, and volta is an optimization of pascale iirc, so I'd guess between 20-25% like kepler to maxwell.

Volta is an optimization ,and pascale was a major outlier even for architecture changes. I'd guess the 2060 is about 20-25% faster, so slotting right between the 1060 and 1070. I would not bother upgrading, the 2070 on the other hand may be worth it, because if it's a 20% increase over a 1070, that's about 10% slower than a 1080 which could be very inciting.

I would say in-between 1060 and 1070, it's a refresh/optimization not a new architecture so it will probably be around 15-30% faster, and the 1070 is over 50% faster than the 1060.
