there's no difference between 2X8 and 4X4

 

although an HDD should be enough for even high bitrate 4K capture.

It's not much faster than an SSD but I will use it for ShadowPlay instead of shredding through SSDs.

one is for sure  - you will upgrade (if you need ofc) later easier with 2x8 now

You'll get the same bandwidth, since it's dual channel in both cases. 

Other things equal, I prefer 2 dimms instead of 4 because sometimes it's harder to get 4 dimms to work at the speed you want (or the manufacturer promised), plus you have free slots just in case. But I would only think about that if prices are very similar.
