In gaming there will be no difference and the speeds are in MB/s (megabytes/second). The only time really is if you doing a transfer between two M.2 drives or such.

ie: NVMe SSD vs SATA SSD.

What you're mistaking is NVMe and m.2.

M.2 is a form factor, which both NVMe and SATA drives come in.

Yes, they will save you some cable managing. I'd go m.2 for an SSD because of that reason.
