I want the sharpest video possible so should I shoot in nuetral sharpness and sharpen in post or 7 (max) sharpness in camera?

While generally lowering the sharpness setting in camera and applying sharpening in post production is recommended, it doesn't work for everything.  The best thing you can do is test various levels of sharpening in your camera and sharpness application in post, see which ones work for your workflow.
