Backplates get really hot, I would not recommend putting LEDs on there.

I am going to create my own Backplate for the 1080 Founders and I wanted to add LED's,

but in what place would I have to connect them? I have no clue where I should draw the power from

What are you thinking of doing exactly with the LED's or want it to do exactly.

I wouldn't connect it to the GPU power since the single 8 pin is already about as close to a limiting factor as you can get on that card

Take it from the 12v pci-e line, a mobo fan header or a usb header. If you want them to dim with gpu fan speed, you can also use the gpu fan connector.

I would recommend using a multimeter to test the voltages before connecting anything. And remember that leds need some kind of current limiting, usually a resistor. (unless it is a kit you are installing)

I want it to light up the Clear part of the Backplate, it's going to made out of Plexiglas

There are a couple ways of lighting it if your going with acrylic, a good one would be to edge light it and to use frosted acrylic to give it a nice even glow or to etch some designs onto the piece. For powering it ideally it should have it's own lead to the PSU for separate power.
