When Z170 boards were able to overclock the i3-61xx chips was pretty cool. Also the GTX 690 (i think...? One of the dual chip GPUs) when you could get driver software to see it as a Quadro.

Because it costs them less ultimately decided with their production run it is cheaper to just software disable a higher end card rather than start a new production

it could be multiple things . companies disable cores for many different reasons . It could be :

-cores are not functional/stable

-cores can't reach performance targets

-cores can't achieve power/heat targets

-cores achieve company spec , however there isn't enough headroom ( companies don't like to have chips that are barely stable ) 

-financial : if the fury ( vanilla ) sells much more than the fury x , you can use those chips to achieve the required demand instead of having unwanted fury x's sitting in warehouses and not having enough fury stock . 

-and many more

It's a matter of supply and demand, they aren't going to sell as many fury xs ad they will furys and since both were in short supply when they launched some of the least performing fury x chips were sold as furys. It costs them the same to produce both, they come from the same slabs of silicon, some simply don't work as well and are sold as lower tier - this happens with all gpus that are used across different cards and also in cpus.

Old ATi Radeon GPUs from the HD2900XT to the HD4000 series can be converted to their more expensive FireGL workstation graphic cards, just by installing a driver mod. All the necessary hardware pieces are on the card. Going back to a Radeon card is as simply removing the driver mod and installing back the Radeon graphic drivers.

HD2900XT cost $500 during that time, it can be converted to the FireGL V8600 which cost $2,000.
