is there like a usb gps device that you can plugin your rig and track in case its stolen

You could install a 4G LTE radio, which have GPS capability.  Windows' "locate my device" feature will activate and basically locate it for you. 

 

That's assuming that someone actually plugs the machine in to a network and tries to use it with the OS you've put on it.

Yes there are a ton of products for that setup. I looked into it for my bicycle.

I cant recall the names of any without going to www.endlesssphere.com. You could try a search, type in GPS and it will come up.
