They used to be a lot more similar than they are now 

SLI uses a combination of the bridge+PCIe lanes, however, it relies too much on the bridge (which if I remember correctly is around 9Gb/sec in band width, or 9GB/sec) and as a result, SLI scales like shit when compared to Crossfire (but its still never a good idea to go above dual Crossfire or SLI).
