Yea you can overclock no problem. Overclocking doesn't cause your power draw to go up from for example 300W to 550W. Maybe a few watts extra

Depends on how much you overclock. Did you test it on a watt meter ? I have a 2 cpu system so your results will be different, but going from Full load Stock: 385W to OC 620W is a big difference. Thats 60% more power use For 35% better cpu performace

EVGA SR-2 / 2x Intel Xeon X5675 4.4Ghz OC / 24GB EEC 1800Mhz OC/ AMD RX570 / Enermax Evoliution 1050W / Main RAID 0: 2x256GB 840EVO SSD / BackUp(1) Raid 5: 3x2TB WD HDD / BackUp(2) 8x2TB / Dell U2412M / Dell U2312HM

You had a 235W increase just by overclocking your 2 CPU's ?!?

That said, those xeon cpu's are nowhere near being comparable to consumer grade cpu's

You most probably not looked at the watt meter or haven't overclocked a cpu to very high speed. Skylake overclock from this site:
