You're gonna have a problem powering anything that isn't CS:GO with 3 144hz monitors. I'd recommend getting a single 21:9 monitor with freesync / gsync and getting a GPU that supports the tech like either the Fury X or the 980ti.

depends on what games you are playing

 

if you are playing pacman then you can get a way with HD graphics

but if you are playing a demanding game <joke mode="on"> such as minesweeper </joke> then you'll need something like the 390x/ 980 ti

I am going to buy 3 1080p 144hz monitors (no debate there) and I was wondering how much VRAM I need for that setup. Also what card out of these 3 would run it the best? (Fury X, 980 TI,R9 380X)

980ti. but i'd go with a single 1440p monitor

The most demanding game I play is Rocket League.

Grab whichever is cheaper, all of them will mutilate rocket League even at 8K.
