installing operating systems wiping hard drive

No. It will only wipe the device/partition it is being installed on. 

When installing a new OS on to a SSD it will wipe the storage device so it can install the new OS on to it, but will it also wipe any other storage devices which are not having the operating system on?

Just make sure to install it on the right partition and you're good to go

Thanks guy just wanted to check its taken me a week to download GTA V and if it wiped it I would of lost it.
