I'm getting the I7 5820K and 16GB ram (hyperx fury, black). Also, should I go with 2 or 4 sticks of ram, does quad channel increase performance a lot?

X99-A would be my vote, as it's low cost, but you still get the better power delivery.

X99-A would be my vote, as it's low cost, but you still get the better power delivery.

Just USB expansion, WiFi, and I think less USB ports between the -A, -Pro, and -Deluxe.... The X99S I'm not sure of.

As far as I know, only the Asus boards have the extra pins for more stability.

I found the difference between the X99-S and the X99-A and X99-Pro version:

The X99-S is the only one to allow 3-way SLI with the 3rd one running at 8x on  the I7 5820K

Can recommend the gigabyte gaming 5.  I have the LGA1150 counterpart

I used my old EVGA GTX285 with its thermal limiters off to cook an egg once.  ONCE.

I'm not sure on saying any one will do, what's the purpose of the rig?

We need to know, or more importantly, you need to know exactly what features are necessary for your build.

Do you need WiFi? Bluetooth? Intel NIC or Killer NIC? ASMedia or Intel controllers? M.2 support? eSATA support? SLI/Crossfire? How many GPU's? Any necessary expansion cards and their formats? a 10gig NIC (ASRock WS-E/10G)? etc. etc. etc.

 

The only thing that separates one X99 board from another are the features they come with. Any feature you don't use is not something you need to be paying for. ASUS and Gigabyte are the only ones AFAIK to have OC sockets (extra pins for hefty cache and RAM OC's). If you don't plan on overclocking it's a non-issue.
