I am looking to build an APU system and for the motherboard I want to know if it is better to have 4x4gb sticks as apposed to 2x8gb sticks.

Doesn't matter a ton. 2x8GB will be a bit faster.

just be sure to get some faster RAM (higher MHz)

There will be no difference, as 2 x 8GB Dimms would run in Dual channel (Assuming that they are in the correct slots for it), and 4 x 4GB Dimms would also run in dual channel, essentially being two sets of 4GB Dimms in dual channel. (That is unless the mobo supports quad channel, though even in that case there would not be a noticeable difference)

For the RAM I would recommend going for as high of a clock speed as you can, something like 2133Mhz DDR3 RAM would be much better for an APU than something like 1333Mhz DDR3 RAM.

Specs: CPU - Intel i7 8700K @ 5GHz | GPU - Gigabyte GTX 970 G1 Gaming | Motherboard - ASUS Strix Z370-G WIFI AC | RAM - XPG Gammix DDR4-3000MHz 32GB (2x16GB) | Main Drive - Samsung 850 Evo 500GB M.2 | Other Drives - 7TB/3 Drives | CPU Cooler - Corsair H100i Pro | Case - Fractal Design Define C Mini TG | Power Supply - EVGA G3 850W

Doesn't really matter. The advantage to having 2x8GB is that you can add more memory later if you'd like. (Although 16GB is already more than enough)
