Curved 21:9 1440p for sure. You still have a relatively high pixel count (plus 4k scaling sounds bleh), and you have a nice surround display. Plus one wide monitor is more immersive than two monitors (no bezels right in the middle)

I don't like multiple monitors at all. If you find a good option at 1440p go for it. 4K in the future when the technology is more mature and the prices had dropped.

had a triple screen 1080p setup - replaced with a single 4k monitor. actually wish i purchased a larger 4k monitor but never go back to triple screen.

You scrubs dont even comprehend how enjoyable gaming is on this. You cant go back to anything else... this aspect ratio trumps Oled, 100+hz, f/a/g sync... anything.

Not to mention all the productivity, creativity, works, coding, editing and professional i can do with this is outstanding... in between the times my mother wakes me up after i fallen asleep in cheetos and mountain dew in a stained armchair.

I've had one screen for maybe 95% of my time using PC's, recently I got a 1440p next to my 1080p so might as well keep both on. To be honest, maybe it's just my usage patterns, I don't really use it much. It's useful sometimes when I work, for example have a browser on the second screen and coding on the other. I got so used to actually switching apps every time I need them, it doesn't feel much faster to have them on the second screen, I think it takes about the same time to move the mouse over than it is to use the taskbar to bring up a minimized app.

You could say it's useful in games, but you need borderless window for that which forces VSync (I hate VSync). Most of the time I'm doing something, it requires my attention and that can't span across 2 monitors. I'd rather have one high-res, maybe even 3440x1440 but that's really expensive.
