295x2 DESTROYS a single 970, and is a little better at high resolutions like 4k compared to two 970's. 

Hyper 212 Evo is great for $20-30

8GB is fine for gaming, but if you like to have a ridiculous amount of stuff open and/or you do ram intensive tasks (like video rendering(I think)) get 16GB.

I think $2000 budget should be enough to get two GTX970s. The question is do you really need two?
