My ath 900x's have a 5-40,000Hz frequency response. But I can't find any dac/amp that has anything different than a 20-20,000Hz frequency response. Does this matter? Will I notice a difference if I found and used a 5-40,000Hz Dac/amp?

Not really no...

Having a 20-20k Hz response is pretty common (this is the frequency range for human hearing)... as for your headphones, the sub-20Hz response could be due to the bass extension tuning of the pair...

Also you won't be able to hear past 20kHz.... That's the limit of human hearing... As for the sub-20Hz frequency, you'll feel them... but not hear them...

you can't hear beyond the 20hz-20khz range and in any case fr specs are pretty much bullshit. Don't worry about it.
