Is this a good idea for an upgrade, I'm playing 3440x1440 and the 780ti just can't seem to hit max settings on new games. I have an evga 1000w PSU. I'd maybe go for dual 980's but less vram and a little more expensive as well

980 has the same amount of VRAM as a 295x2. Also, two R9 290x are the same thing as a 295x but cheaper.

2 970's would be fine as well, and save you money.

I only worry about the 3gb of ram with shadow of mordor claiming 6gb etc. I don't plan on upgrading again for a while.

I have 2 780ti's in sli to game on a 4k monitor. I haven't had any vram issues, so you should be okay on 1440p. Just don't run crazy anti aliasing and you should be fine.
