And btw this is the first time I've heard of that CPU... Most people used 2600Ks instead...

Depends on the game, as of now i shouldn't. But i can't predict how powerful our pc's will have to be to run some new titles coming up!

I would buy the two 980's and when you experience a bottleneck in games, upgrade your CPU at that time.

Nope. I have my 2600k running @4.3GHZ (wont go above that no matter what ) I have 2 760s in SLI and they seems fine. It did take a very small hit on my cpu but nothing i really noticed.

Definitely not. That's what, about a 4770/4790 @ 4GHz? You have plenty of headroom. The only games that COULD bottleneck would be CryEngine or Frostbite games due to their usage of all eight cores (though I've still never experienced that).

Depends on the game. If the game you are playing is CPU bound adding another graphics card will make no difference.

It won't. But if you're running games in like 180fps+ you might get a little boost with a newer faster CPU. But in the 30s, 60s and 90s there wouldn't be any bottlenecks.
