So I have never played any of the assassins creed games, and am thinking about giving one a try.

Do I need to play them in order to understand the story? If not, what is the best one?

This is a hard one.. you'd definitely get bored playing them all back to back, I'd say play the first one, for the story and general gameplay knowledge, then jump into blackflag.

Assassin's Creed

Assassin's Creed II

Assassin's Creed Brotherhood

Assassin's Creed Revelations

Assassin's Creed III

Assassin's Creed IV Black Flag

From first to last, the plot carries through.

Shot through the heart and you're to blame, 30fps and i'll pirate your game - Bon Jovi

Take me down to the console city where the games are blurry and the frames are thirty - Guns N' Roses

Arguing with religious people is like explaining to your mother that online games can't be paused...

It looks like the earliest one on steam is Assassins Creed 2...

The first game is still worth playing for the story, as it sets the stage for 2, Brotherhood, Revelations and 3. You can finish the main story pretty quickly. You can buy it cheap off of Ebay or Amazon.

The original Director's Cut should be on Steam. I own it xD

Hmm... Didnt come up when I searched for "Assassins Creed"

Any way I bought Assassins Creed 2, and have just started it. Seems good so far, but the controls are really crazy, and kinda a pain to change.

I play with a controller, it's a lot easier than the keyboard and mouse controls I find. I'm currently on Revolutions myself.
