Is it a problem if my ram runs at 7200MHZ and my 14700K is capped at 5600MHZ?

Should be fine. 14700K memory speed isn't capped, 5600 is just what Intel guarantees will work. Anything higher and you're on your own. Unless you run into stability issues, you're perfectly fine. If you run into stability issues, just correct those (usually it's the motherboard disliking sub-timings, the CPU doesn't care) and then you're fine again.

You'll only be capped to that memory speed if you run the 14700K on an H610 board, which I would hope you wouldn't do - those boards can't even really handle a 14700K at stock. Other motherboards, such as B660, B670, H670, Z690, and Z790 let you run the memory at higher speeds - it's technically considered overclocking, but it will likely work.
