How do i seperate public wifi from my banking apps?

Im going on a trip and i dont need my apps, but i dont want to delete them.

 

Any way for the apps to not use the public wifi even if i accidentally open them?

Could install a VPN then route the apps through that, or just block the apps from network access in your device settings, if your device allows this.

I would assume it's not hard to simply not open the apps.

I also assume that if they're anything like the banking apps I use, they require a PIN or a fingerprint to actually log in?

Or you can just use mobile data tethering for a while, unless you want to download or have video call

There is no easy way to do this, and the benefit from doing this is extremely small. 

Not only should everything important sent by your bank app be encrypted, but you should also be required to authenticate when you open the app.

 

At best an attacker (assuming you have a decent bank) could maybe get info about which bank you use, but that's about it. 

Not worth the hassle protecting you from that. Even if you get something like a VPN service and make sure that's on at all times, you are basically just trading one potential attacker for another. Instead of a random person at a coffee shop seeing which bank you use, it'll now be the vpn owner who sees it.
