Recommendations for new build around existing 3080

I am planning on building a new PC since my I build my last one in fall of 2016 and think it is time for an upgrade. I already have an EVGA 3080 12gb that I am going to use so my budget is for everything else that I need just for the computer itself (no peripherals/monitors). When I build my last PC it was a bit simpler since AMD didn't really seem like a competitor with intel at that point and the i9 line wasn't much of a thing so you could just pick out the latest X700k and call it a day. I haven't been paying nearly as much attention to the hardware landscape recently so with the competition between AMD and Intel and the potential to used DDR4 or DDR5 I am a bit overwhelmed by all the options. For CPU I generally want to get something at roughly the X700k point (or whatever the AMD equivalent is). For a case I've noticed a lot of nice builds using the Lian Li o11 Dynamic Evo which looks nice but really I just want something relatively nice with modern IO (USB-C etc). will probably be getting either and AIO or air-cooler but definitely not custom loop. I figure I will need about a 750-1000W power supply for the 3080 and CPU to have some headroom. I appreciate any recommendations since it seems like I decided to build right as everything was changing (e.g., DDR4 to DDR5, z690 to z790), making figuring stuff out a bit more challenging.

A high quality 850 watt psu would be a nice choice for these parts. Imo raptor lake is a better choice then intel now at least as their cpus usually have better performance at similar prices
