Does it matter if an eye terminal is slightly larger than the battery terminal I am connecting it to?

The battery has a spade terminal, it is not supposed to have a bolt go through it.  Crimp a female spade terminal to your wire and simply slide it on.

I am new to electrical stuff and have tried to research stuff about how to install an eye terminal, but everything online seems to be talking about it for cars. I am making a homemade e-bike. 

Question: Is it a problem to install an eye terminal on a battery when the eye terminal is slightly larger than the battery terminal? 

I guess the hard part would be finding a screw small enough for the battery terminal but large enough to cover the eye terminal.

Your image doesn't show up. You'll lose some surface area on the connection, but most likely won't matter. In real high current situations if it's a bad fit, I've used copper washers the correct size top and bottom.  If it's close, you should be fine, once it's tightened down, the nut and what it's attached to should make good contact.

It should be fine if you make sure it makes good contact.
Maybe use a washer if the nut is to small.

But if the differences are not to great it should be fine.
