Classic Oldschool wallet

Hello guys,

 

I want to get a little into crypto, NFTs and stuff (again), but I can't find a wallet which suits my needs.
Is there no offline wallet, like in the classic old BTC days but for BTC and ETH? I want to store my crypto on my offline file server,

only connecting it to the internet if I am willing to to a transaction.

Perhaps a hardware wallet like Ledger or Trezor suit your needs.
