I have a asus strix 3080 ti oc that running on heavy load at 70-75 degrees.

Should i change thermal pads and paste or buy a Alphacool Eiswolf 2 AIO - 360mm RTX 3090/3080 with Backplate ?

that's still not bad imo, maybe water cooling will bring it down a bit, but i don't think 88c vram, 75c core will hurt the card long term.

don't know why you would possibly need to change the thermal paste. i'm pretty sure the factory that put it together knows what they are doing. all you will accomplish is a great risk of making temps WORSE by breaking the 'factory seal', just for the tiny chance of a degree or two better cooling. the thermal paste has nothing to do with VRAM temps anyway. I would leave it alone.
